Every bottle we produce reflects years of careful vineyard management, a deep understanding of our maritime terroir, and an unwavering commitment to quality. From the first sip to the lingering finish, these wines tell the story of Irish soil, Atlantic light, and patient craftsmanship.
Our Philosophy
At Moravexi, we believe that the finest wines are made in the vineyard, not the cellar. Our winemaking philosophy centres on minimal intervention and maximum respect for the fruit. We work with grape varieties specifically selected for Ireland's cool maritime climate: Solaris and Phoenix for our whites, Rondo and Regent for our reds. Each variety thrives in the long daylight hours and moderate temperatures of the Suir Valley, developing complex flavour profiles that would be impossible to replicate elsewhere.
Our soils are a patchwork of clay, limestone, and old red sandstone, providing excellent drainage and contributing a distinctive mineral quality to the wines. We farm sustainably, using cover crops between vine rows to promote biodiversity and natural pest management. No herbicides touch our land, and we hand-harvest every grape to ensure only the best fruit reaches the press.
In the winery, we use a combination of stainless steel fermentation for freshness and small Irish-coopered oak barrels for added texture and complexity. Fermentation is slow and temperature-controlled, preserving the delicate aromatics that define our house style. The result is wines that are vibrant, balanced, and unmistakably Irish.
White
Vintage 2024 · 12.5% ABV
Our flagship white wine captures everything we love about winemaking in Ireland. The Solaris grape ripens beautifully in our maritime climate, producing a wine of remarkable aromatic complexity. On the nose, expect elderflower, green apple, and a whisper of grapefruit zest. The palate is bright and focused, with crisp acidity balanced by a subtle honeyed richness that develops in the glass. A mineral finish recalls the limestone bedrock beneath our vines.

Named after the Comeragh Mountains that form the dramatic backdrop to our vineyard, this reserve red represents the pinnacle of our winemaking. Rondo grapes are harvested at optimal ripeness and fermented in small batches before spending twelve months in Irish-coopered oak barrels. The result is a medium-bodied wine with a deep ruby hue and inviting aromas of blackberry, dark cherry, and a subtle smokiness. On the palate, silky tannins carry flavours of plum, black pepper, and vanilla through to a long, warming finish.

Rosé
Vintage 2024 · 11.5% ABV
Pale salmon in colour with a copper-tinted edge, this dry rosé is made from Regent grapes pressed gently after just a few hours of skin contact. The winemaking is deliberately restrained, allowing the natural character of the fruit to speak clearly. Delicate aromas of wild strawberry, rose petal, and white peach fill the glass, while the palate reveals a refreshing interplay of soft red fruit and chalky minerality. The finish is clean and lingering, with a saline quality that speaks to our proximity to the coast.

The Phoenix grape is one of the most reliable varieties for Irish conditions, and our example demonstrates why it deserves more attention. Fermented entirely in stainless steel to preserve its vibrant freshness, this bone-dry white opens with aromas of lemon verbena, fresh-cut hay, and a faint herbal quality reminiscent of thyme. The palate is lean and energetic, with zippy citrus notes, a touch of green pear, and a pleasantly textured mid-palate from extended lees contact. An excellent aperitif wine that also pairs wonderfully with goat cheese or simple pasta dishes.

Our Regent Estate Red is the more approachable counterpart to the Rondo Reserve, designed for everyday enjoyment without sacrificing complexity. The Regent grape produces a lighter-bodied red with an appealing garnet colour and vibrant fruit character. Expect aromas of ripe raspberry, cranberry, and a hint of dried herbs on the nose. The palate is juicy and fresh, with soft tannins, bright acidity, and flavours of red currant and cinnamon spice. Fermented in stainless steel and aged briefly in older oak, this wine preserves the pure fruit expression of the grape while adding a subtle savoury dimension.

NV · 12% ABV
Our newest addition and a genuine first for Moravexi. This traditional-method sparkling wine is made from a blend of Solaris and Phoenix grapes, fermented in bottle and aged on lees for eighteen months before disgorgement. The extended lees contact gives the wine a creamy, brioche-like quality that complements its natural brightness. Fine, persistent bubbles carry aromas of baked apple, toasted almond, and white flowers. The palate is refreshing yet complex, with a citrus-driven acidity that lifts the autolytic richness into an elegant, celebratory finish. Limited production of 800 bottles.

Pairing Guide
Our wines are crafted to complement Ireland's outstanding produce. Here are our favourite pairings, developed alongside local chefs and tested at countless dinners.
Fresh oysters from Dungarvan, pan-seared scallops, or grilled mackerel from the Celtic Sea pair magnificently with our Solaris and Phoenix whites.
Solaris · Phoenix · Brut
Aged Cashel Blue finds its match in our Rondo Reserve, while a fresh Knockalara sheep's cheese sings alongside the Atlantic Blush Rosé. Our tasting room features a rotating cheese selection.
Rondo · Rosé · Phoenix
Irish beef and lamb are world-renowned, and our Comeragh Rondo Reserve was practically designed for a Sunday roast. The Regent Estate Red complements lighter preparations like herb-crusted rack of lamb.
Rondo Reserve · Regent
Spring asparagus with hollandaise, roasted beetroot salads, or wild mushroom risotto all find expressive companions among our wines. The Phoenix Dry White is especially versatile with vegetable-forward dishes.

From Vine to Bottle
Every vine is tended by hand throughout the growing season. We use cover crops, compost from local farms, and integrated pest management to maintain soil health without synthetic chemicals.
Grapes are picked by hand during October, usually across two to three passes through the vineyard. This allows us to select only bunches at perfect ripeness, discarding any that fall below our standard.
We use a whole-cluster pneumatic press operating at low pressure. This extracts clean, clear juice with minimal bitterness, particularly important for our white and rosé wines.
Our whites rest in stainless steel on fine lees for texture. Our reds spend between six and twelve months in a combination of Irish and French oak barrels, depending on the wine and the vintage.
