The Estate

🌿 Our Vineyard

Moravexi sits on 12 hectares of south-facing slopes in the Suir Valley, one of the warmest microclimates in Ireland. The estate lies between Carrick-on-Suir and the Comeragh Mountains, benefiting from a rain shadow effect that gives our vines more sunshine and less moisture than much of the surrounding landscape. The soils here are a mix of limestone bedrock, glacial till, and loamy topsoil, providing excellent drainage and a mineral complexity that shows clearly in our wines.

The proximity of the Atlantic Ocean moderates our temperatures year-round, preventing the harsh frosts that can damage vines in more continental climates. Long summer days — Ireland enjoys up to 17 hours of daylight in June — give our grapes an extended growing season, allowing them to develop flavour and aromatic complexity at a gentle pace. This slow ripening is the key to the distinctive freshness and elegance that defines Moravexi wines.

Our vineyard blocks are planted at varying elevations and orientations, each one selected to suit specific grape varieties. Solaris thrives on our highest, most exposed sites, while Rondo and Regent favour the sheltered lower slopes where the soils are deeper and warmer. This careful matching of variety to site is the foundation of quality viticulture, and it allows us to express the full range of our terroir across our wine collection.

What Guides Us

Our Philosophy

Every decision at Moravexi, from the vineyard to the cellar, is guided by three core principles that we believe produce the most honest and compelling wines.

Sustainability First

We farm without synthetic herbicides or pesticides, relying instead on cover crops, compost from local farms, and careful canopy management to keep our vines healthy. Our hedgerows shelter native pollinators and beneficial insects, creating a balanced ecosystem across the estate. Water is managed through natural drainage, and we generate a portion of our energy needs through solar panels on our winery roof. Sustainability is not a marketing claim for us; it is the only responsible way to farm land that we hope to pass on to future generations.

Minimal Intervention

We believe the winemaker's role is to guide, not to impose. In the cellar, we use native yeasts for fermentation whenever possible, allow our wines to find their own clarity through time rather than heavy filtration, and add only minimal amounts of sulphur for stability. Oak is used sparingly and always in support of the fruit, never to dominate it. The goal is to let the character of each vintage speak for itself, preserving the qualities that make our fruit unique rather than smoothing them away in pursuit of a uniform style.

Sense of Place

Every bottle of Moravexi should taste unmistakably of where it was grown. We are not trying to replicate Burgundy or the Rhine; we are exploring what the Suir Valley can offer on its own terms. Our wines carry the freshness of Atlantic air, the mineral backbone of limestone soils, and the aromatic intensity that comes from cool, slow ripening. We work closely with the local food community, pairing our wines with Waterford blaa bread, Knockanore cheese, and Dunmore East seafood, celebrating the unique flavour landscape of southeast Ireland.

The Land

🌍 Terroir & Climate

The concept of terroir — the idea that a wine expresses the total environment in which its grapes were grown — is central to everything we do at Moravexi. The Suir Valley offers a rare combination of geological variety and climatic advantage that makes it genuinely suited to viticulture.

Limestone & Glacial Soils

Our bedrock is Devonian limestone, overlaid with glacial deposits that vary from block to block. Some areas have heavy clay content that retains moisture, while others are sandier and drain quickly. This mosaic allows us to match each grape variety to its ideal soil profile.

Maritime Microclimate

The Suir Valley sits in a rain shadow between the Comeragh and Knockmealdown Mountains. Average annual rainfall here is roughly 850mm, well below the Irish national average. Combined with the warming influence of the Gulf Stream, our growing season is longer and more reliable than many people expect from Ireland.

Extended Daylight

At latitude 52°N, our summer days are remarkably long. In June, the vineyard receives over 17 hours of daylight. This extended photosynthesis period allows the grapes to ripen slowly, building complexity and retaining the natural acidity that gives cool-climate wines their characteristic vibrancy.

Eoin Callanan

Co-Founder & Vineyard Manager

Eoin spent five years working in Alsace, learning the intricacies of cool-climate viticulture. He oversees every aspect of vineyard management, from pruning schedules to harvest decisions. His instinct for reading the weather and understanding vine health is the backbone of our grape quality.

Co-Founder & Winemaker

Siobhán trained in the Douro Valley of Portugal before returning to Ireland. She brings a confident yet restrained winemaking style, favouring gentle extractions and extended ageing. Her ability to balance fruit, acidity, and structure defines the Moravexi house style.

Declan Foley

Assistant Winemaker

A graduate of University College Cork's food science programme, Declan joined Moravexi in 2020. He manages fermentation monitoring, barrel sampling, and laboratory analysis. His precision and curiosity have been instrumental in refining our cellar protocols.

Aoife is the first face visitors see at Moravexi. With a background in hospitality management and a WSET Level 3 qualification, she leads our vineyard tours, curates our tasting experiences, and coordinates private events with warmth and expertise.

Our Journey

📅 Key Milestones

2015

The Beginning

Eoin and Siobhán Callanan purchase a 12-hectare farm in the Suir Valley. Soil surveys and site analysis begin immediately.

2016

First Vines Planted

Three hectares of Solaris, Rondo, and Regent are planted in the first phase. Trellising systems are designed specifically for the Irish climate, maximising sun exposure and airflow through the canopy.

2019

First Commercial Vintage

First 800 bottles produced. The inaugural Suir Valley Solaris receives immediate attention from Irish food critics and sommeliers.

2021

Winery & Tasting Room Opens

A purpose-built winery and visitor centre opens its doors. Designed to blend with the landscape, the building incorporates sustainable materials and a green roof. The tasting room becomes a draw for visitors to Ireland's Ancient East.

2023

Comeragh Reserve Launched

Our flagship red, the Comeragh Rondo Reserve, is released after 12 months in Irish oak, proving Ireland can produce structured reds.

2026

New Horizons

Production surpasses 8,000 bottles annually. We begin experimental plantings of Pinot Noir and Chardonnay, and break ground on a dedicated sparkling wine facility. Moravexi is now stocked in over 40 restaurants across Ireland.

What We Grow

🍇 Our Grape Varieties

We cultivate six grape varieties carefully selected for their suitability to our climate and terroir. Each brings a different dimension to our wine collection.

White

Solaris

Developed in Germany, Solaris is our most reliable white variety. It ripens early, resists mildew naturally, and produces wines with lifted floral aromatics, green apple flavours, and a crisp citrus finish. It forms the backbone of our Suir Valley Solaris bottling.

Red

Rondo

A cold-hardy red variety that produces deeply coloured wines with aromas of blackberry and dark cherry. Rondo responds beautifully to oak ageing, developing smoky, spicy notes that complement its natural fruitiness. It is the variety behind our Comeragh Reserve.

Red / Rosé

Regent

Regent is a versatile red variety that we use for both our Atlantic Blush Rosé and as a blending component in our reds. When gently pressed, it yields pale salmon-coloured juice with delicate strawberry and rose petal notes that are ideal for rosé production.

White

Seyval Blanc

An established cool-climate grape with a long history in English and Welsh vineyards. Seyval Blanc produces wines with a lean, mineral character, subtle notes of grapefruit and wet stone, and a clean, dry finish. We use it in small quantities for blending.

White

Phoenix

A German crossing that produces aromatic, Muscat-like wines with peach, elderflower, and lychee notes. Phoenix adds a tropical, fragrant dimension to our range and is particularly popular with visitors to our tasting room.

Experimental

Pinot Noir

Our newest planting, established in 2024. Pinot Noir is notoriously demanding, but we believe our south-facing limestone slopes mirror conditions found in Champagne and parts of southern England. Early results are promising; our first Pinot harvest is expected in 2027.
